The Role of Wine and Cuisine Recipes

Chef John Ash

A lot of cooks would agree that the use of wine in some meals have added a certain spice in making them sought after. Such can be attributed towards the contributions of Chef John Ash, an internationally recognized chef, educator and author. His continued work and application of wine towards cuisine and his evident mastery for winery has been his obvious trademark that has brought him towards world wide prominence.

John is known to hold various classes and teaches culinary schools and institutions with regards to the tricks of the proper use of wine for culinary meals. Majority of his known reliability has been attributed towards the wine industry and such has been something that has continued to push him up towards fame and fortune.

He has published two books, namely American Game Cooking in 1991 and From the Earth to the Table: John Ash’s Wine Country Cuisine in 1996. The latter book was awarded the Julia Child Award for Best Cookbook in 1996 by the International Association of Culinary Professionals.

Mulled Wine By Emeril Lagasse

Cabernet grapes on vine

Sometimes, parties are more about the drinks than the food – is this right? Whether you think so or not, I do believe that you will enjoy this mulled wine recipe by celebrity chef Emeril Lagasse.

INGREDIENTS
3 star anise pods
3 allspice berries
6 whole black peppercorns
3 cinnamon sticks
1 large orange
6 whole cloves
3 bottles fruity red wine, such as Rioja, Grenache, Shiraz, or Raspberry Merlot
1 1/2 cups brandy or Grand Marnier
1 cup whole dried figs
1 cup chopped dried apricots
1 cup dried cherries
1 cup dried, pitted and chopped prunes
3 hibiscus flowers, (optional, for garnish)

Special equipment: cheesecloth and butcher’s twine

To make the sachet:

Place a large square of cheesecloth on the cutting board. Add the star anise, allspice berries, peppercorns, and cinnamon sticks directly to the center. Tie up the cheesecloth with the twine to make a small package and set aside.

To make the spiced wine:

1. Take the orange and stud it with the cloves. In a large pot (not aluminum) over medium heat, add the sachet, clove-studded orange, wine, and brandy. Stir to combine. Then add all of the dried fruit. Cook over medium heat for 10 minutes until the wine begins to simmer. Reduce heat to low; simmer until flavors have melded, about 30 minutes.
2. To serve, ladle out the spiced wine and some fruit to each glass. Garnish with hibiscus flowers, if desired. Serve immediately.

I don’t know about you but I can almost smell and taste that medley of fruity flavors!

4th Annual Malibu Calabasas Food and Wine Festival

Food and wine festivals are always worth writing about – who wouldn’t want to go to one? If you are in the Malibu area, or you plan on going there in the next several weeks, then you ought to know that the 4th Annual Malibu Calabasas Food and Wine Festival is going to be held on the 19th of June.

It has been described as the celebration of food, wine, and all things Southern Californian! If that isn’t enticing, then I don’t know what is. The location of the festival itself is something worth visiting – the very beautiful Calabasas. Of course, there are activities that will entice anyone who is even slightly into food.

Live cooking demos by celebrity chefs are the highlights of the festival. This year, some really popular names are going to grace the festival: Joachim Splichal, TV Chef Tommy Tang and world champion Chef Frania Mendivil.

Aside from the celebrity chefs, other entities will be participating in the food and wine festival. How does more than a hundred wineries and breweries coming together sound? Various food and wine vendors will also showcase their wares on the said date.
